So today, my fiance and I are taking a bus (7 hours and 45 minutes…oy) to Canada!! Traveling can be a dieter’s nightmare! When we walked into Port Authority in NYC, I saw a wide array of bagels, muffins, donuts, cookies, etc. It would be easy to buy a bunch of unhealthy snacks and an unhealthy lunch for the bus, but I decided to have food prepared for us so we wouldn’t have to! Because I need to eat gluten free, preparedness is key. And even though my fiance doesn’t have a gluten allergy, he appreciates having healthy food prepared to maintain a healthy lifestyle. Above is a picture of my lunch box from Laptop Lunches. For my morning snack, I’m having a handful of almonds and a small piece of dark chocolate. For lunch, I’m having some Paleo Chicken Tenders (recipe to follow…OMG) with 2 Tbsp barbecue sauce and an apple. For my afternoon snack, I’m having a serving of Gluten Free pretzels from Glutino. Yum!! I’ve packed some Udi’s Gluten Free Bread just in case…as I said, preparedness is key. Alfred has a 100 calorie pack of Pringles, the same lunch with two Paleo Chocolate Chip Cookies (see recipe) and he also has Gluten Free pretzels for the afternoon. When we get to Canada, I’ve asked my friend who we’re visiting to make our first stop the grocery store. I want to load up on fruit, veggies, gluten free essentials, and some lean meats for our stay. Eating out on vacation is not only expensive, but there is more of a chance that I will stray from my diet or accidentally consume gluten.
I’m so excited to see my friend! We actually met at the diet resort I went to in 2010. Having friends with goals similar to yours is always helpful. Anyway, I’ll try to post while I’m gone, but expect some awesome recipes when I get back. The Paleo Chicken Tenders have become a staple in our home. So good!!! XOXO.
